Ingredients

  • Clam Juice
  • Fresh Cilantro
  • Crushed Tomatoes In Puree
  • Rice Vinegar
  • Fresh Lime Juice
  • White Horseradish
  • Hot Pepper Sauce
  • Garlic Clove
  • Plum
  • Avocado
  • Lump Crabmeat
  • Medium Shrimp
  • Cooked Lobster Meat
  • Lime Wedge

Instructions

  1. Gazpacho sauce:
  2. In a medium size bowl stir together clam juice, cilantro, tomatoes with puree, vinegar, lime juice, horseradish, hot pepper sauce and garlic
  3. Season sauce to taste with salt and pepper
  4. Cover and refrigerate until cold, about 4 hours
  5. Can be made 24 hours in advance
  6. Keep refrigerated
  7. To assemble:
  8. Divide tomatoes, then avocado among 4 large martini glasses or deep goblets
  9. Top with crab, dividing equally
  10. Pour about 1 / 4 cup gazpacho sauce over crab in each glass
  11. Divide shrimp, then lobster among glasses
  12. Divide remaining sauce among glasses
  13. Garnish with lime wedges and cilantro sprigs and serve
