  • Yellow Cornmeal
  • Breadcrumbs
  • Pine Nuts
  • Garlic Clove
  • Lemon Peel
  • Butter
  • Fresh Cilantro
  • Fresh Parsley
  • Fresh Lemon Juice
  • Sea Scallops
  • Plum Tomatoes
  • Olive Oil
  • Fresh Lime Juice
  • Honey
  • Lime Zest
  • Arugula
  • Fresh Mint Leaves

Instructions

  1. Finely grind first 4 ingredients and 1 teaspoon lemon peel in processor
  2. Set crumb mixture aside
  3. Mix butter, cilantro, parsley, lemon juice, and remaining 1 / 2 teaspoon lemon peel in small bowl
  4. Season this herb butter to taste with salt and pepper
  5. Preheat oven to 450f brush rimmed baking sheet with oil
  6. Place scallops on sheet
  7. Sprinkle with salt and pepper
  8. Top each with tomato slice, then crumb mixture, dividing equally
  9. Top each with 1 teaspoon herb butter
  10. Bake until scallops are just opaque in center, about 8 minutes
  11. Meanwhile, whisk 1 / 4 cup oil, lime juice, honey, and lime peel in small bowl
  12. Season dressing with salt and pepper
  13. Toss arugula and mint in bowl, adding dressing to taste
  14. Divide greens among 4 salad plates
  15. Top with scallops and serve
