Sausage Soup With Spinach And Wild Rice

A nice, healthy, wild rice soup with different veggies from your ordinary peas and carrots. This one is sort of italian inspired. From cooking light.

Ingredients

  • Water
  • Wild Rice
  • Sweet Italian Turkey Sausage
  • Olive Oil
  • Onion
  • Garlic Cloves
  • Tomato Paste
  • Dried Oregano
  • Dried Basil
  • Reduced-sodium Fat-free Chicken Broth
  • Diced Tomatoes
  • Fresh Spinach
  • Salt
  • Black Pepper
  • Parmesan Cheese

Instructions

  1. Bring 1 1 / 2 cups water to a boil in a medium saucepan
  2. Add wild rice, reduce heat, cover and simmer 1 hour until rice is cooked
  3. Set aside
  4. Cook sausage in a dutch oven over medium-high heat until browned
  5. Stir to crumble
  6. Drain sausage and set aside
  7. Heat oil in dutch oven over medium heat and saute onion 3 minutes
  8. Add garlic and cook 1 minute
  9. Add sausage, 3 cups water, tomato paste, oregano, basil, broth, and tomatoes
  10. Bring to a boil, reduce heat, and simer 20 minutes
  11. Stir in cooked wild rice, spinach, salt, and pepper
  12. Ladle soup into bowls and serve with parmesan to sprinkle over
