Ingredients

  • Fresh Asparagus
  • Eggs
  • Milk
  • Ground Nutmeg
  • Salt & Freshly Ground Black Pepper
  • Onion
  • Canola Oil
  • Button Mushrooms
  • Fresh Spinach
  • Roma Tomatoes
  • Mozzarella Cheese
  • Basil

Instructions

  1. Preheat oven to 350 f
  2. Remove the tough ends of the asparagus and discard
  3. Blanch or steam asparagus for 5 minutes, or until bright green and tender
  4. Rinse under cold water and drain thoroughly
  5. Beat eggs and milk together
  6. Season with nutmeg, salt and pepper
  7. Set aside
  8. In a ovenproof skillet, preferably cast iron, saute onion in oil until translucent, then add mushrooms and saute until golden brown
  9. Add spinach and cook until completely wilted
  10. Add chopped tomatoes
  11. Pour egg mixture into skillet
  12. Stir briefly
  13. Sprinkle mozzarella on top, decorate with asparagus and basil and bake 10 to 15 minutes, or until cheese is melted and bubbly
  14. Serves 4 generously
