Ingredients
- Boneless Skinless Chicken Breast Halves
- Bacon
- Green Pepper
- Red Pepper
- Onion
- Chili Powder
- Garlic Powder
- Parsley
- Flour Tortillas
Instructions
- In a large skillet, cook bacon over medium high heat until crisp
- Drain on paper towel
- Discard all but 1 tbls bacon fat
- Rinse and seed peppers
- Cut into strips
- In skillet with bacon fat, add onion and peppers
- Saute over medium heat for about 5 minutes
- Add chicken and spices
- Cook, stirring, for about 15 minutes or until chicken is cooked through
- Crumble bacon and sprinkle on top
- Sprinkle with chopped parsley, spoon into warm tortillas and serve immediately
