Something different with chicken and apples–quick.

Ingredients

  • Chicken Breast Fillets
  • Sage Leaves
  • Prosciutto
  • Red Apples
  • Olive Oil
  • Chicken Stock
  • Balsamic Vinegar
  • Vegetables

Instructions

  1. Preheat oven to 210c / 190c fan forced
  2. Cut fillets crosswise into 4 chunks
  3. Season with black pepper
  4. Top each with a sage leaf
  5. Wrap in a slice of prosciutto and secure with toothpicks
  6. Set aside
  7. Toss apples with the oil in a flameproof roasting pan
  8. Top with chicken
  9. Roast for 15-20 minutes or until chicken is tender and juices run clear when tested with a skewer
  10. Remove chicken to a plate
  11. Cover with foil
  12. Place pan with apples over a moderate heat on the stovetop
  13. Add stock and balsamic
  14. Simmer briefly until juices concentrate
  15. Season to taste
  16. Spoon apples and juices onto serving plates
  17. Top with chicken
  18. Serve with veggies & mash
  19. Enjoy
