This is a family favorite. Sometimes i substitute chickpeas or other beans for the kidney beans. I suppose if you like ground beef, you could substitute ground beef for the kidney beans as well. If you love cheese, by all means, use more … If i've got enough i do!

Ingredients

  • Garlic Cloves
  • Onion
  • Green Pepper
  • Cumin
  • Chili
  • Flour
  • Tomatoes
  • Kidney Beans
  • Salt And Pepper
  • Eggs
  • Milk
  • Oil
  • Cornmeal
  • Salt
  • Baking Soda
  • Corn
  • Cheddar Cheese

Instructions

  1. Saute garlic, onion and green peppers in oil
  2. Add cumin and chili
  3. Cook for 2 minutues
  4. Add flour
  5. Cook for 1 minute
  6. Add tomatoes and kidney beans
  7. Add salt and pepper to taste
  8. Simmer for 20 minutes or longer
  9. While the tomato mixture is simmering, make the cornbread mixture
  10. Mix together the eggs, mild and oil
  11. Add the cornmeal, salt and baking soda
  12. Mix
  13. Add the corn
  14. Mix
  15. Grease / spray 9 x 13 pan
  16. Pour 2 / 3 cup cornmeal mixture into the bottom of the pan
  17. Sprinkle 1 1 / 2 cups of cheddar cheese on top of the cornmeal mixture
  18. Pour tomato mixture on top of cheese
  19. Spoon the rest of the cornmeal mixture around the outer edges of the pan, on top of the tomato mixture
  20. Sprinkle remaining cheese in the middle of the pan, on top of tomato mixture
  21. Bake at 350f for 45 minutes
  22. Let rest for 10 minutes before serving
