Roasted Root Vegetables With Pearl Onions

This is a fantastic side dish for a thanksgiving turkey, and one of my favorite ways to prepare vegetables for the holidays.

This is a fantastic side dish for a thanksgiving turkey, and one of my favorite ways to prepare vegetables for the holidays.

Ingredients

  • White Pearl Onions
  • Parsnips
  • Carrots
  • Sweet Potato
  • Turnip
  • Dark Brown Sugar
  • Balsamic Vinegar
  • Dijon Mustard
  • Butter
  • Salt
  • Ground Black Pepper
  • Water

Instructions

  1. Cook onions in a large pot of boiling, salted water for 2 minutes
  2. Drain
  3. Peel root vegetables, and chop into large pieces
  4. Leave base end intact for rustic presentation
  5. Place in glass baking dish
  6. Preheat oven to 325 degrees
  7. Combine sugar, vinegar and mustard in bowl for glaze
  8. Transfer onions to glass baking dish, with root vegetables
  9. Add glaze, butter, 1 tsp salt, 1 / 4 tsp pepper, and 1 / 2 cup water
  10. Toss to coat
  11. Cover with foil
  12. Roast for 25 mins or till soft, for crisper vegetables remove foil at end of cooking
  13. Check seasonings and serve
  14. Serves 4
