Found this on the 'net somewhere. I just love rhubarb sauces.

Ingredients

  • Rhubarb
  • Onion
  • Seedless Raisins
  • Brown Sugar
  • Vinegar
  • Salt
  • Ground Cinnamon
  • Ground Ginger
  • Ground Allspice

Instructions

  1. Combine rhubarb, onion, raisins, sugar and vinegar
  2. Cook until thick, about 25 minutes
  3. As mixture thickens, stir frequently to prevent sticking
  4. Add spices
  5. Cook 5 minutes longer
  6. Pour, boiling hot, into sterlized pint jars, leaving 1 / 8-inch head space
  7. Adjust caps
  8. Process in a boiling water bath according to manufactures instructions
  9. Makes about 4 pints
  10. Excellent accompaniment with meats
