I wanted a delicious oatmeal cookie recipe without all the butter, and i love to use pumpkin as a substitute. After some trial and error, i've worked out a terrific reduced fat cookie that tastes delicious and is healthy too!

I wanted a delicious oatmeal cookie recipe without all the butter, and i love to use pumpkin as a substitute. After some trial and error, i've worked out a terrific reduced fat cookie that tastes delicious and is healthy too!

Ingredients

  • Pumpkin Puree
  • Butter
  • Egg
  • Egg Whites
  • Agave Nectar
  • Brown Sugar
  • Whole Wheat Flour
  • All-purpose Flour
  • Baking Powder
  • Cinnamon
  • Nutmeg
  • Rolled Oats
  • Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees
  2. In a bowl combine all the wet ingredients, sugar, nectar, eggs and pumpkin together
  3. Mix well
  4. In another bowl mix the dry ingredients, flours, oats, baking powder, and spices
  5. Add the pumpkin mixture to the flour mixture, then add the chocolate chips
  6. Drop cookies by large tablespoon onto a oil-sprayed cookie sheet
  7. Bake for 15-20 minutes until golden brown
