An easy, filling meal, without a long list of ingredients! I like this served over rice.

Ingredients

  • Boneless Skinless Chicken Thighs
  • Vegetable Oil
  • Onion
  • Garlic
  • Green Pepper
  • Medium Curry Paste
  • New Potatoes
  • Frozen Green Pea
  • Coconut Milk

Instructions

  1. In a deep frying pan, brown chicken thighs in oil
  2. Remove chicken from pan& keep warm
  3. Saute onion and green pepper until soft
  4. Add garlic and saute 1 minute
  5. Stir in curry paste and cook 3-4 minutes
  6. Add chicken, potatoes, peas and coconut milk
  7. Simmer 10 minutes or until curry sauce has thickened to desired consistency
  8. Serve over rice
