Ingredients

  • Instant Rice
  • Water
  • Brown Sugar
  • Cornstarch
  • Ground Ginger
  • Crushed Red Pepper Flakes
  • Soy Sauce
  • Pineapple Chunks
  • Boneless Lean Pork
  • Coleslaw Mix

Instructions

  1. Cook rice in 1 cups of the water as directed on package
  2. Meanwhile, in small bowl, mix 3 tablespoons of the brown sugar, the cornstarch, ginger, red pepper, if desired, the remaining cup water, the soy sauce and reserved 2 tablespoons pineapple liquid
  3. Set aside
  4. Heat 12-inch nonstick skillet over medium-high heat
  5. Add drained pineapple chunks
  6. Sprinkle with remaining 1 tablespoon brown sugar
  7. Cook 5 minutes, turning chunks occasionally
  8. Remove pineapple from skillet
  9. Set aside
  10. In same skillet, cook and stir pork over medium-high heat 2 minutes
  11. Add coleslaw mix
  12. Cook and stir 3 to 6 minutes or until pork is no longer pink in the center and cabbage is tender
  13. Stir pineapple and cornstarch mixture into pork mixture
  14. Cook and stir 3 minutes or until pork is glazed and sauce is slightly thickened
  15. Serve over rice
