Ingredients

  • Garlic Cloves
  • Broccoli Florets
  • Penne Pasta
  • Evaporated Skim Milk
  • All-purpose Flour
  • Reduced-fat Cheddar Cheese
  • Parmesan Cheese
  • Black Pepper
  • Salt

Instructions

  1. In large pot of boiling water, cook garlic 3 minutes, until softened
  2. With slotted spoon, remove garlic from water
  3. Mince garlic
  4. Set aside
  5. In same pot of boiling water, cook broccoli 3 minutes, until bright green and just softened
  6. With slotted spoon, remove broccoli from water
  7. Set aside
  8. In same pot of boiling water, cook penne 8-10 minutes, until tender
  9. Drain, discarding liquid
  10. Set aside
  11. Meanwhile, in large nonstick skillet, with wire whisk, combine milk and flour, blending until flour is dissolved
  12. Cook over medium heat, stirring constantly with wire whisk, 4 minutes, until mixture is bubbling and thickened
  13. Stir in minced garlic
  14. Reduce heat to low
  15. Add cheddar and parmesan cheeses, pepper and salt to milk mixture
  16. Cook, stirring constantly, until cheeses are melted
  17. Stir in cooked broccoli and penne
  18. Cook, stirring frequently, just until heated through
  19. Serving provides: 1 milk, 1 1 / 2 vegetables, 1 protein, 2 breads, 10 optional calories
  20. Per serving: 384 calories, 6 g total fat, 4 g saturated fat, 21 mg cholesterol, 590 mg sodium, 56 g total carbohydrate, 5 g dietary fiber, 27 g protein, 673 mg calcium
