Pasta With Creamy Spinach Sauce

This simple pasta dish has a mild and comforting flavor, with or without the garlic. Serve with a cherry tomato, cucumber and bell pepper salad tossed with balsamic vinaigrette.

This simple pasta dish has a mild and comforting flavor, with or without the garlic. Serve with a cherry tomato, cucumber and bell pepper salad tossed with balsamic vinaigrette.

Ingredients

  • Fresh Spinach
  • Garlic Clove
  • Nonfat Cottage Cheese
  • Low-fat Milk
  • Ground Nutmeg
  • Ziti Pasta
  • Parmesan Cheese

Instructions

  1. Bring large pot of water to a boil
  2. Add 1 tablespoon salt and spinach- cook 1 minute
  3. Using slotted spoon, remove spinach and transfer to bowl of cold water
  4. Drain and squeeze dry
  5. Chop coarsely
  6. Bring spinach water back to a boil
  7. Meanwhile, in food processor fitted with steel blade, mince garlic if using
  8. Add cottage cheese and blend until fairly smooth
  9. Add cooked spinach and milk and blend until smooth
  10. Add nutmeg and salt and pepper to taste
  11. Transfer to shallow serving bowl
  12. Add pasta to boiling water, stirring to prevent sticking
  13. Cook until just tender, about 10 minutes- drain well
  14. Add pasta to bowl with spinach sauce and toss to coat
  15. Sprinkle with parmesan and toss again
  16. Serve hot
