From better homes and gardens, a great vegetarian dinner that meat eaters will like too!

Ingredients

  • Tagliatelle Pasta Noodles
  • Frozen Artichoke Hearts
  • Red Sweet Peppers
  • Onion
  • Garlic Cloves
  • Olive Oil
  • Tomatoes
  • Fresh Basil
  • Parmesan Cheese

Instructions

  1. Cook pasta according to package directions
  2. Immediately drain
  3. Return pasta to pan
  4. Keep warm
  5. Meanwhile, place artichoke hearts in a colander under cold running water to separate
  6. In a large skillet cook and stir artichokes, sweet pepper, onion, and garlic in hot oil over medium-high heat for about 5 minutes or until vegetables are tender
  7. Stir in tomato and basil
  8. Cook and stir about 2 minutes more or until heated through
  9. Add artichoke mixture to pasta
  10. Toss gently to mix
  11. Sprinkle each serving with parmesan cheese
  12. Makes 4 to 6 side-dish servings
