Have you thought recently about doing dinner for two? This is one that can be on the table in 30 minutes.

Ingredients

  • Garlic Powder
  • Onion Powder
  • Poultry Seasoning
  • Lemon Pepper
  • Boneless Skinless Chicken Breast Halves
  • Parmesan Cheese
  • Flour
  • Olive Oil
  • White Wine
  • Chicken Broth
  • Green Onions
  • Capers

Instructions

  1. Combine garlic powder, onion powder, poultry seasoning, and lemon pepper
  2. Sprinkle spice mix on both sides of chicken breasts, then coat each side with parmesan cheese and flour
  3. Heat a heavy skillet over medium-high heat
  4. When hot, add olive oil and swirl to coat the pan
  5. Brown chicken breasts on both sides, turning only once
  6. It should not be cooked through and through
  7. Remove to a plate and keep warm
  8. Add white wine to deglaze the pan, scraping up any browned bits
  9. Cook for 1 minute, then add chicken broth
  10. Bring to a simmer and return chicken breasts to the pan
  11. Simmer until liquid is reduced by half, then add green onions and capers
  12. Cook an additional 2 minutes
  13. Serve chicken breasts with pan gravy
