Recipe is taken from my america's best recipes cookbook. The recipe states that they are light and airy on the inside and crispy on the outside — the addition of the pecans sound wonderful! The recipe also recommends serving these popovers with honey butter (recipe included).

Ingredients

  • Butter
  • Honey
  • Lemon Rind
  • All-purpose Flour
  • Salt
  • Milk
  • Eggs
  • Pecans

Instructions

  1. Combine first 3 ingredients, stir well, and chill
  2. Combine flour and next 3 ingredients
  3. Beat with a wire whisk just until smooth
  4. Stir in pecans
  5. Pour batter evenly into six greased custard cups
  6. Bake at 425 degrees for 30 minutes or until golden
  7. Serve immediately with chilled butter
