Orange And Lemon Schnitzel Rolls

I made this today and it tasted good, but i would use veal schnitzel instead of beef. Maybe the beef i used was from the very rear end of the schnitzel, the meat was tough, but the innards were good 🙂

Ingredients

  • Beef Schnitzel
  • Fresh Breadcrumbs
  • Orange Rind
  • Lemon, Rind Of
  • Spring Onions
  • Orange Juice
  • Salt
  • Fresh Black Pepper
  • Spice Plum Sauce
  • Parsley

Instructions

  1. Beat the schnitzel to an even thickness with a meat mallet
  2. Cut in half
  3. Put breadcrumbs in a bowl with the orange and lemon rind
  4. Slice spring onions finely
  5. Mix into breadcrumbs with orange juice, salt and pepper
  6. Divide the crumb mixture evenly between the schnitzel, place the stuffing down the middle
  7. Roll up the schnitzels like a parcel, and place side by side in a greased oven dish
  8. Mi x plum sauce and extra orange juice together and pour over the schnitzels
  9. Bake, covered, at 180 c for 40 minutes
  10. Uncover and bake a further 10 minutes
  11. Sprinkle parsley to serve
