The six o’clock scramble

Ingredients

  • Olive Oil
  • Chicken Thighs
  • Onion
  • Carrots
  • Garlic
  • Chili Powder
  • Quinoa
  • Chicken Broth
  • Crushed Tomatoes
  • White Potato
  • Baby Spinach

Instructions

  1. In a big stock pot, heat the oil over med-high heat
  2. Add in the chicken and brown it for about 2 minutes per side
  3. Add in the onion, carrots, garlic, and chili powder
  4. Cook the mixture for about 5 minutes more, until the vegetables soften slightly
  5. In a strainer, rinse the quinoa thoroughly with cold water
  6. Add in the chicken broth, tomatoes, potatoes, and quinoa
  7. Bring the liquid to a boil, decrease the heat, and simmer the stew for 30-40 minutes
  8. Just before serving, stir in the spinach and let it wilt for about 2 minutes
  9. Check seasoning and add salt and pepper to taste
