New England Clam And Corn Chowder With Herbs

I haven't made this yet, but i'm sure i will…the photo in bon appetit looks absolutely delicious.

Ingredients

  • Bacon
  • Onion
  • Carrots
  • Dried Thyme
  • Dried Rosemary
  • All-purpose Flour
  • Whole Milk
  • White Potatoes
  • Chopped Clams With Juice
  • Corn
  • Fresh Parsley

Instructions

  1. Cook bacon in large saucepan over medium heat until crisp
  2. Transfer bacon to opaper towels to drain
  3. Pour out all but 3 tablespoons drippings from pan
  4. Add next 4 ingredients to pan
  5. Sprinkle with salt and pepper
  6. Saute until vegetables are crips tender, about 5 minutes
  7. Sprinkle flour over
  8. Stir 1 to 2 minutes
  9. Gradually add milk to pan, stirring constantly
  10. Bring to boil
  11. Reduce heat to medium and cook until slightly thickened, stirring often about 5 minutes
  12. Add potatoes, clams with juice, and drained corn
  13. Bring to boil
  14. Reduce heat to medium-low and simmer until potatoes are tender, stirring often, about 10 minutes
  15. Season to taste with salt and pepper
  16. Divide soup among bowls, sprinkle with bacon and parsley, and serve
