Ingredients

  • Tri-color Spiral Pasta
  • Red Onion
  • Green Onions
  • Green Pepper
  • Red Pepper
  • Yellow Pepper
  • Grape Tomatoes
  • Cucumber
  • Kalamata Olive
  • Fresh Basil Leaves
  • Fresh Parsley
  • Fresh Mint Leaves
  • Feta Cheese
  • Extra Virgin Olive Oil
  • Fresh Lemon Zest
  • Lemon Juice
  • Red Wine Vinegar
  • Fresh Garlic Cloves
  • Dried Greek Oregano
  • Fresh Ground Black Pepper
  • Fine Sea Salt

Instructions

  1. Prepare the dressing: grate 1 / 2 teaspoon fresh lemon zest
  2. Knead and cut lemons into halves to juice, yielding 2 1 / 2 tablespoons juice
  3. Whisk together remaining ingredients well
  4. Set aside
  5. Bring bring 6 quarts water to a boil in a large pot
  6. Add 1 1 / 2 tablespoons kosher salt and spiral pasta, returning to boiling
  7. Cook pasta according to package directions
  8. Drain pasta well
  9. Return pasta to pot and toss with a very small amount of olive oil to prevent sticking
  10. Let stand to cool
  11. Prep all pasta salad vegetables and fresh herbs to specifications
  12. Place prepped vegetables into a large bowl
  13. Add the cooled pasta to vegetables in bowl, combining well
  14. Add 4-6 ounces cubed or crumbled feta cheese, without tossing
  15. Whisk the dressing mixture again
  16. Pour the dressing evenly over pasta salad
  17. Gently fold pasta salad over from the bottom a few times to evenly distribute the dressing and combine feta cheese
  18. Chill pasta salad at least 2 hours to overnight
  19. Garnish pasta salad with parsley sprig, or fresh basil or mint leaves
  20. Serve and enjoy!
