Mushrooms Stuffed With Barley And Blue Cheese

Not your normal stuffed mushrooms! I also add 1 cup of wine to the pan after the mushrooms are in it to steam them while baking.

Ingredients

  • Fresh Mushrooms
  • Butter
  • Olive Oil
  • Onion
  • Red Pepper
  • Heavy Cream
  • Blue Cheese
  • Cooked Barley
  • Sun-dried Tomatoes
  • Fresh Basil
  • White Pepper

Instructions

  1. Clean mushrooms with damp paper towel
  2. Remove mushroom stems
  3. Finely chop stems and set aside
  4. Saut mushroom caps in butter and oil in skillet until almost tender
  5. Drain on paper towels
  6. Saut mushroom stems, onions, and red pepper in skillet
  7. Add cream
  8. Bring to a boil
  9. Reduce heat and add cheese
  10. Cook until melted
  11. Stir in barley, basil, sundried tomatoes and pepper
  12. Cook until thoroughly heated
  13. Spoon barley mixture into mushroom caps
  14. Place mushroom caps in greased shallow baking pan
  15. Cover and bake at 350 degrees 10 minutes or until tender
  16. Drain on paper towels
  17. Garnish stuffed mushrooms with basil
