Mushroom Parmigiano Bruschetta

From cooking light...use any combo of fresh mushrooms in this appetizer. Could also be good over pasta! Shaved parmigiano-reggiano looks fancy, but you can also grate the cheese and stir it into the topping.

From cooking light…use any combo of fresh mushrooms in this appetizer. Could also be good over pasta! Shaved parmigiano-reggiano looks fancy, but you can also grate the cheese and stir it into the topping.

Ingredients

  • Plum Tomato
  • Sherry Wine Vinegar
  • Capers
  • Sugar
  • Crushed Red Pepper Flakes
  • Salt
  • Basil Leaves
  • Butter
  • Cremini Mushroom
  • Shiitake Mushroom Caps
  • Portabella Mushroom Cap
  • Green Onion
  • Garlic Clove
  • French Baguettes
  • Parmigiano-reggiano Cheese

Instructions

  1. Combine first seven ingredients in a bowl and set aside
  2. Melt butter in a med
  3. Skillet over med heat
  4. Add mushrooms, onions and garlic
  5. Cook 5 minutes or until tender, stirring frequently
  6. Add mushroom mixture to tomato mixture and toss well to combine
  7. Spoon about 1 tbsp mushroom mixture onto each bread slice
  8. Sprinkle evenly with cheese
  9. Serve immediately
