Moroccan Chicken Salad California Pizza Kitchen Copycat

Had this last week at cpk and just had to figure out how to make it. I think this is pretty close! It's delicious nevertheless.

Had this last week at cpk and just had to figure out how to make it. I think this is pretty close! It's delicious nevertheless.

Ingredients

  • Butternut Squash
  • Beets
  • Dried Cranberries
  • Hard-boiled Egg
  • Avocado
  • Carrots
  • Red Bell Pepper
  • Dates
  • Romaine Lettuce
  • Champagne Dressing
  • Roasted Almonds
  • Boneless Chicken Breasts
  • Ground Coriander
  • Cinnamon
  • Olive Oil

Instructions

  1. To make the spiced chicken: combine coriander and cinnamon with olive oil to make a paste
  2. Spread on chicken breasts with a bbq brush or fingers
  3. Cook chicken in pan or grill until fully cooked
  4. Let chicken cool and slice
  5. While chicken is cooking, roast diced squash in a 400 degree oven for about ten minutes
  6. Toss all other ingredients together with the champagne dressing to taste
  7. Top with sliced chicken & almonds
