Ingredients

  • Chicken
  • Garlic Cloves
  • Cloves
  • Black Peppercorns
  • Tomatillos
  • Serrano Peppers
  • Pork Fat
  • Cold Water
  • Epazote
  • Parsley
  • Thai Holy Basil
  • Salt

Instructions

  1. Fry chicken in animal fat, until lightly browned
  2. In a food processor blend cloves, peppers, pepper and tomatillos
  3. Add mix to fried chicken and add 2 cups of water
  4. Cook for 40 minutes
  5. Just before serving add the epazote, parsley and hierba santa, which have been previously blended in a food processor with a little water, so they stay bright green
  6. Cook for 5 minutes more and remove from heat
  7. The sauce should not be thick
  8. Serve with white rice on the side
