Molasses Brined Pork Chops

Ingredients

  • Water
  • Kosher Salt
  • Dark Brown Sugar
  • Molasses
  • Vanilla Extract
  • Ice Cube
  • Center-cut Pork Chops
  • Fresh Sage
  • Fresh Ground Black Pepper
  • Ground Cloves
  • Ground Nutmeg
  • Ground Cardamom
  • Ground Cinnamon
  • Garlic Cloves
  • All-purpose Flour
  • Olive Oil

Instructions

  1. Make the brine: combine water and salt in a large bowl
  2. Stir until the salt dissolves
  3. Add in sugar, molasses, and vanilla
  4. Stir until sugar dissolves
  5. Stir in ice
  6. Add chops, cover and refrigerate 8 hours or overnight
  7. Remove chops from brine, pat dry
  8. Discard brine
  9. Make the rub: combine all the rub ingredients
  10. Rub over both sides of chops
  11. Refrigerate 30 minutes
  12. Place flour in a shallow dish
  13. Dredge chops in flour
  14. Heat oil in a large nonstick skillet over med-high heat
  15. Add chops and cook 5 minutes on each side or until done
