Ingredients

  • Olive Oil
  • Leek
  • Onion
  • Garlic Cloves
  • All-purpose Flour
  • Red Wine
  • Low Sodium Chicken Broth
  • Tomato Sauce
  • Dried Basil
  • Dried Oregano
  • Salt
  • Ground Turkey
  • Egg
  • Egg Whites
  • Raw Zucchini
  • Salt And Pepper

Instructions

  1. Preheat oven to 350f coat 4 x 8-inch loaf pan with nonstick cooking spray
  2. Heat oil in a large skillet over medium heat
  3. Add leek, onion, and garlic
  4. Saut until just golden brown
  5. Add flour, stir and cook for 2 minutes
  6. Add wine, broth, tomato sauce, basil, oregano, and salt to skillet
  7. Bring to boil, reduce heat to low and simmer uncovered for 15 minutes
  8. Set sauce aside
  9. In large bowl, combine ground turkey, egg, egg whites, zucchini, and flour
  10. Mix well
  11. Add 1 / 4 cup sauce, and stir in gently
  12. Form meatloaf in prepared loaf pan
  13. Cover with foil
  14. Bake for 40 to 50 minutes
  15. Remove from oven and let rest 10 minutes
  16. Re-heat remaining sauce and serve with meatloaf
