Ingredients

  • Onion
  • Leek
  • Scallion
  • Olive Oil
  • Garlic
  • Peas
  • Vegetable Stock
  • Chives
  • Of Fresh Mint
  • Salt And Pepper

Instructions

  1. In pot, saute onions, leeks, scallions and garlic in olive oil until softened add peas and stock, bring to boil
  2. Reduce heat and simmer 30 minutes
  3. Add chives and mint, cook for 5 minutes
  4. With hand blender puree soup, season with salt and pepper
