Mini Turkey Meatballs With A Fresh Couscous Salad

We have been eating a lot of turkey over the last few years instead of beef, and i developed this recipe to fill some of my mediterranean tastes one night.

We have been eating a lot of turkey over the last few years instead of beef, and i developed this recipe to fill some of my mediterranean tastes one night.

Ingredients

  • Couscous
  • Ground Turkey Breast
  • Cumin
  • Dried Oregano
  • Cinnamon
  • Scallions
  • Roma Tomatoes
  • English Cucumber
  • Lemon Juice
  • Lemon Zest
  • Garbanzo Beans
  • Parsley

Instructions

  1. Cook couscous according to package instructions
  2. Combine couscous with scallions, tomatoes, cucumber, lemon juice, lemon zest, parsley, garbanzo beans and 1 tbs olive oil
  3. Season with salt and pepper
  4. Mix ground turkey with cumin, cinnamon, oregano, and salt & pepper to season
  5. Shape into small meatballs
  6. Heat a large skillet with 2 tbs olive oil to medium high heat
  7. Add meatballs and cook until desired doneness
  8. About 4-5 minutes on all sides
  9. Serve meatballs with the couscous salad
  10. Garnish with a sprinkling of parsley, olives, or feta cheese if you prefer
