Lite Veggie Stir Fry

Not the usual stir fry, no thickened sauce, just the moisture from the veggies; a little oil and the great taste of the veggies.

Ingredients

  • Olive Oil
  • Carrot
  • Snap Peas
  • Mushrooms
  • Green Onions
  • Water Chestnuts
  • Baby Bok Choy
  • Bok Choy
  • Spinach
  • Salt And Pepper

Instructions

  1. Heat the oil in a wok, add the carrots, snap peas and mushrooms
  2. Sprinkle with salt and pepper
  3. Stir fry for 2 to 3 minutes
  4. Add the green onion and water chestnuts
  5. Stir fry for 2 minutes
  6. Add both bok choys and spinach
  7. Stir fry 1 minute
  8. Cover and cook for about 2 minutes or just until wilted
  9. Season again if you wish
  10. Serve immediately
