Lime Soup With Tortilla Strips And Chicken

A very tasty, light, refreshing soup. I sometimes make this ahead and keep it warm in the crockpot. I also don't use nearly as much oil as the recipe calls for. From bon appetit.

A very tasty, light, refreshing soup. I sometimes make this ahead and keep it warm in the crockpot. I also don't use nearly as much oil as the recipe calls for. From bon appetit.

Ingredients

  • Olive Oil
  • Corn Tortillas
  • Chicken Broth
  • Fresh Cilantro
  • Fresh Orange Juice
  • Apple Cider Vinegar
  • Ground Cumin
  • Fresh Lime Juice
  • Boneless Skinless Chicken Breast
  • Tomatoes
  • Green Bell Pepper
  • White Onion
  • Limes

Instructions

  1. Heat 1 cup oil in medium skillet over medium heat
  2. Working in batches, add tortilla strips
  3. Fry until golden, about 2 minutes
  4. Transfer to paper towels
  5. Drain
  6. Mix broth and next 4 ingredients in large saucepan
  7. Bring to boil
  8. Reduce heat
  9. Simmer 15 minutes
  10. Add lime juice
  11. Season with salt and pepper
  12. Meanwhile, heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat
  13. Sprinkle chicken with salt and pepper
  14. Add chicken to skillet
  15. Saut 3 minutes
  16. Add tomato, bell pepper and onion
  17. Saut until chicken is cooked through, about 2 minutes longer
  18. Place 1 lime slice in each of 6 bowls
  19. Ladle soup over
  20. Mound tortilla strips and chicken mixture in center of each
