Lime Chicken And Thai Fish Sauce

A wonderfully easy and quick-to-make chicken dish i found in cooking light.

Ingredients

  • Boneless Skinless Chicken Breast Halves
  • Salt
  • Canola Oil
  • Reduced-sodium Fat-free Chicken Broth
  • Chili Sauce
  • Fish Sauce
  • Fresh Lime Juice
  • Creamy Peanut Butter
  • Roasted Peanuts
  • Lime Wedge

Instructions

  1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap
  2. Pound to 1 / 2-inch thickiness using a meat mallet or rolling pin
  3. Sprinkle chicken evenly with 1 / 4 teaspoon salt
  4. Heat oil in a large nonstick skillet over medium heat
  5. Add chicken, cook 6 minutes on each side or until done
  6. Remove chicken from pan, keep warm
  7. Add broth, chili sauce, and fish sauce
  8. Bring to a boil, scraping pan to loosen browned bits
  9. Cook until broth mixture is reduced to 2 / 3 cup
  10. Remove from heat
  11. Add lime juice and peanut butter, stirring until smooth
  12. Serve sauce over chicken, sprinkle with peanuts
  13. Garnish with lime wedges, if desired
