Ingredients

  • Quinoa
  • Chicken Broth
  • Hard-boiled Eggs
  • Yellow Bell Pepper
  • Red Onions
  • Cherry Tomatoes
  • Lemon, Juice Of
  • Olive Oil
  • Cayenne Pepper

Instructions

  1. Thoroughly rinse quinoa
  2. Bring chicken broth to a boil, then add quinoa
  3. Lower heat and simmer for 20 minutes
  4. Meanwhile, boil two eggs
  5. Sliver the onions and bell pepper and cut the cherry tomatoes in half
  6. Combine the juice of one lemon and the olive oil along with 1 / 4 tsp of cayenne pepper
  7. Peel the eggs and discard the egg yolks
  8. Coarsely chop the whites
  9. Toss all ingredients together in a bowl
  10. Yields 3 1 cup servings
