Ingredients

  • Unbleached All-purpose Flour
  • Quick-cooking Oats
  • Baking Powder
  • Baking Soda
  • Salt
  • Eggs
  • Sour Cream
  • Milk
  • Water
  • Lemons, Zest Of
  • Lemon Extract
  • Poppy Seed
  • Vanilla Powder
  • Butter
  • Honey

Instructions

  1. For the pancakes: combine flour, oats, baking powder, baking soda and salt
  2. Add eggs, sour cream, milk and water
  3. Beat just until blended, but still lumpy
  4. Add lemon zest, lemon oil, poppy seeds and vanilla powder or extract
  5. Mix thoroughly
  6. Let batter stand for 30 minutes
  7. Add more milk or water, if needed
  8. Spoon batter onto a hot, buttered griddle or skillet and cook pancakes until browned on both sides
  9. Serve with honey butter
  10. For the honey butter: melt butter in a saucepan over low heat
  11. Slowly add honey, stirring constantly, until smooth and opaque
  12. Remove from heat and cool slightly
