Quick to do taco salad with homemade guacamole. This one is really really good and another great way to use up leftover chicken. Times do not include chilling.

Ingredients

  • Cooked Chicken
  • Taco Seasoning Mix
  • Water
  • Lettuce
  • Green Onion
  • Avocados
  • Sour Cream
  • Salsa
  • Lemon Juice
  • Salt And Pepper
  • Tomatoes
  • Sliced Ripe Olives
  • Colby-monterey Jack Cheese
  • Corn Chips

Instructions

  1. Combine chicken, taco seasoning mix and water
  2. Cook and stir over medium-low heat 5 to 10 minutes or until sauce is thickened
  3. Make guacamole by mixing well
  4. Avocados, sour cream, salsa, lemon juice and salt and pepper
  5. In a 2-quart glass bowl layer
  6. Lettuce, tomato, green onions, chicken mixture, guacamole, olives and cheese
  7. Cover and refrigerate 1 hour
  8. Top with corn chips before serving
