Ingredients

  • Hot Italian Sausages
  • Onions
  • Kale
  • Garlic Cloves
  • Salt And Pepper
  • Lasagna Noodles
  • Grape Tomatoes
  • Part-skim Ricotta Cheese
  • Parmesan Cheese

Instructions

  1. Preheat oven to 400 degrees
  2. In a 5-quart pot, cook sausage over medium heat, stirring often, until browned, about 5 minutes
  3. Stir in onions
  4. Cover, and cook until softened, 5 minutes
  5. Uncover
  6. Cook, stirring occasionally, until golden brown, 10 to 15 minutes
  7. Add garlic
  8. Cook 2 minutes
  9. Transfer to a large bowl
  10. Add kale and 1 / 2 cup water to pot
  11. Season with salt and pepper
  12. Cover
  13. Cook over medium-low heat, tossing occasionally, until tender, 10 to 15 minutes
  14. Drain
  15. Coarsely chop
  16. Transfer to bowl with onions
  17. Meanwhile, cook noodles 2 minutes less than package instructions
  18. Drain
  19. Rinse under cold water
  20. Add noodles, tomatoes, and ricotta to the bowl
  21. Season with 1 1 / 2 teaspoons salt and 1 / 2 teaspoon pepper
  22. Toss well
  23. Pour into a 9-by-13-inch baking dish
  24. Smooth top with a spatula
  25. Sprinkle with parmesan
  26. Bake until golden brown, about 40 minutes
  27. Cool 10 minutes before serving
