Use leftover lamb and pan drippings from roast for this stew. From saveur #89, dec. 2005. Attributed to dan ansotgui.

Ingredients

  • Leg Of Lamb
  • Drippings
  • White Wine
  • Olive Oil
  • Garlic Cloves
  • Onion
  • Green Bell Pepper
  • Red Pepper Flakes
  • Pimientos

Instructions

  1. Heat oil in a large heavy pot over medium heat
  2. Add garlic, onions and pepper, cook for 5 minutes
  3. Add pepper flakes and cook until they release their aroma
  4. Add lamb pieces, wine and pan drippings
  5. Reduce heat to medium-low
  6. Simmer for 45 minutes
  7. Add pimentos, cover pot and simmer until lamb is very tender, 2-3 hours more
