A deliciously scrumptious version of that all-too-well known hearty soup. Made with lighter ingredients so it's a little more healthy than some of the other kinds out there!

Ingredients

  • Baking Potatoes
  • Butter
  • Diced Onion
  • Flour
  • Chicken Broth
  • Evaporated Skim Milk
  • Salt And Pepper
  • Bacon
  • Cheddar Cheese
  • Green Onions

Instructions

  1. Pre-bake your potatoes
  2. Melt the butter in a large saucepan over medium heat
  3. Add onion and cook until tender
  4. Stir in flour and cook through
  5. Gradually stir in broth and evaporated milk
  6. Scoop potato pulp from 1
  7. 5 potatoes and mash up
  8. Add pulp to liquid mixture
  9. Cook over medium heat until mixture just comes to boil
  10. Dice up remaining potatoes and skin and add to soup
  11. Add salt and pepper to taste
  12. Heat through and serve with optional toppings
  13. Serves 4 small servings, 2 big servings
  14. Cook time includes time to bake potatoes
