This is an easy slow-cooker jambalaya-like dish that my family and friends have enjoyed. I adjust the amount of cajun spice depending on who i am cooking for.

Ingredients

  • Celery
  • Onion
  • Tomatoes
  • Low Sodium Chicken Broth
  • Tomato Paste
  • Worcestershire Sauce
  • Cajun Seasoning
  • Boneless Skinless Chicken Breast Halves
  • Instant Rice
  • Cooked Shrimp
  • Green Bell Pepper

Instructions

  1. Add the first 7 ingredients to a 4-quart slow cooker
  2. Stir to combine
  3. Add in the chicken
  4. Stir
  5. Cover and cook on low for 5-6 hours
  6. Add in rice, shrimp, and green pepper
  7. Cover and let stand 10-15 minutes or until most of the liquid is absorbed and rice is tender
  8. Adjust seasoning to taste
