Jalapeno Cheese Soup

A nice soup for cold winter days. You can adjust the heat by adding as many jalapenos as you like.

A nice soup for cold winter days. You can adjust the heat by adding as many jalapenos as you like.

Ingredients

  • Chicken Broth
  • Celery
  • Yellow Onions
  • Garlic Salt
  • White Pepper
  • Velveeta Cheese
  • Jalapeno Pepper
  • Sour Cream
  • Flour Tortilla

Instructions

  1. Cut the velveeta cheese into cubes
  2. In a large saucepan, place the chicken broth, diced celery, diced onions, garlic salt and white pepper
  3. Cook over high heat for 10 minutes, or until the mixture reduces and thickens slightly
  4. In a blender or food processor, place the broth and the cubed velveeta cheese
  5. Puree them together until the mixture is smooth
  6. Return the pureed mixture to the saucepan and simmer it for 5 minutes
  7. Add the diced jalapeno peppers and mix thoroughly
  8. Serve with a dollop of sour cream and a warm flour tortillas
