Italian Prosciutto Cups

Ingredients

  • Frozen Chopped Spinach
  • Ricotta Cheese
  • Parmesan Cheese
  • Mushroom
  • Onions
  • Oregano
  • Salt
  • Egg
  • Prosciutto

Instructions

  1. Cook spinach
  2. Drain well
  3. In medium bowl, combine spinach, parmesan, mushrooms, onions, oregano, salt and egg
  4. Spray miniature muffin tins with pam
  5. Cut prosciutto into quarters
  6. Press 1 / 4 slice into muffin tin, pressing against bottom and sides
  7. Spoon cheese mixture into cup about 2 / 3 full
  8. Bake 20-25 minutes in preheated 375 degree oven
  9. Remove
  10. Can be frozen
