Italian Fried Steak With Roasted Pepper Pesto

Ingredients

  • Seasoned Dry Bread Crumb
  • Romano Cheese
  • Egg
  • Water
  • Beef Cube Steaks
  • Olive Oil
  • Roasted Sweet Red Peppers
  • Fresh Basil Leaf

Instructions

  1. In a shallow dish combine crumbs and half the cheese
  2. In another shallow dish, beat together egg and water
  3. Cut meat in 8 equal-size portions
  4. Lightly sprinkle with salt and pepper
  5. Dip in egg mixture, then crumb mixture
  6. Press lightly to coat
  7. In a 12-inch skillet heat 1 tablespoon olive oil over medium-high heat
  8. Working in two batches, cook steak, about 5 minutes per side, adding more oil as needed
  9. Remove to a serving platter
  10. Cover to keep warm
  11. Carefully wipe skillet clean
  12. Meanwhile, for sauce, in blender or processor combine drained peppers and remaining cheese
  13. Process until nearly smooth
  14. Finely chop 1 / 2 cup of the basil
  15. Set aside
  16. Transfer pepper mixture to hot skillet and heat through
  17. Remove from heat
  18. Stir in finely chopped basil
  19. Pour sauce over steaks
  20. Sprinkle with remaining basil
