Ingredients

  • Water
  • Asparagus
  • Olive Oil
  • Onion
  • Garlic Cloves
  • Chicken Broth
  • Salt
  • Couscous
  • Fresh Ground Black Pepper
  • Red Bell Pepper
  • Cashew Nuts

Instructions

  1. To cook asparagus place water in a medium saucepan
  2. Bring water to a boil
  3. Add asparagus, and cook 2 minutes or just until crisp-tender
  4. Drain
  5. Place asparagus in ice water 1 minute
  6. Drain
  7. Set aside
  8. Heat oil in a medium saucepan over medium-high heat
  9. Add onion and garlic
  10. Saut 3 to 4 minutes or until tender
  11. Stir in chicken broth and salt
  12. Bring to a boil
  13. Add couscous
  14. Bring to a boil
  15. Cover, reduce heat and cook 5 minutes
  16. Stir in asparagus, black pepper, red bell pepper and cashews
  17. Cook an additional 3 to 5 minutes or until liquid is absorbed
