This rum cake is inspired by island ingredients and adds coconut, peaches, lime, ginger and honey to a traditional rum cake. Crystalized ginger is sweetened ginger and is great in baked goods. It can be purchased in many specialty stores and in spice aisles of most supermarkets. You may use a dark rum, if preferred. *caution, if you are using a cake mix that already has pudding in it, omit the box of pudding in the recipe.

Ingredients

  • Pecans
  • Yellow Cake Mix
  • Instant Vanilla Pudding
  • Canned Peaches
  • Eggs
  • Cold Water
  • Canola Oil
  • Rum
  • Crystallized Ginger
  • Golden Raisins
  • Coconut Flakes
  • Honey
  • Butter
  • Water
  • Lime, Zest Of

Instructions

  1. Preheat oven to 325f
  2. Spray bundt pan with cooking spray
  3. Sprinkle in chopped pecans
  4. Set aside
  5. Using a blender, pulse peaches until liquid
  6. Mix all cake ingredients together including peaches, except raisins
  7. Pour mixture into bundt pan
  8. Add golden raisins, distributing evenly
  9. Bake for 1 hour
  10. Test with toothpick
  11. If inserted toothpick comes out clean, your cake is done
  12. Cool for hour
  13. Invert on a cakeplate
  14. Remove from pan
  15. Poke holes in cake using a fork
  16. Pour glaze equally over the cake to distribute
  17. For glaze:
  18. Melt butter in pan
  19. Stir in water and rum
  20. Add honey and boil 5 minutes, stirring constantly
  21. Remove from heat
  22. Add zest of one lime
  23. You may use ground ginger in place of crystallized ginger in the cake mixture, but use amount
