Irish Stout Chicken

Cooked on the stove this is a hearty one dish meal.

Ingredients

  • Vegetable Oil
  • Onion
  • Garlic Cloves
  • Chicken
  • Carrots
  • Parsnips
  • Dried Thyme Leaves
  • Salt
  • Black Pepper
  • Stout Beer
  • Button Mushroom
  • Frozen Peas

Instructions

  1. Heat oil in large skillet over medium heat until hot
  2. Add onion and garlic
  3. Cook and stir 3 minutes or until tender
  4. Remove vegetables with slotted spoon to small bowl
  5. Arrange chicken in single layer in skillet
  6. Cook over medium-high heat 5 minutes per side or until lightly browned
  7. Add onion, garlic, carrots, parsnips, thyme, salt and pepper to skillet
  8. Pour stout over chicken and vegetables
  9. Bring to a boil over high heat
  10. Reduce heat to low
  11. Cover and simmer 35 minutes
  12. Add mushrooms and peas to skillet
  13. Cover
  14. Cook 10 minutes
  15. Uncover skillet
  16. Increase heat to medium
  17. Cook 10 minutes or until sauce is slightly reduced and chicken is no longer pink in center
