Individual Mini Peppermint Cheesecakes

Description

I made these for my husband's office christmas party.

Ingredients

• Vanilla Wafers
• Cream Cheese
• Sweetened Condensed Milk
• Peppermint Candy
• Red Food Coloring
• Cool Whip

Instructions

1. Set out 18 foil muffin or cupcake cups
2. Place 1 vanilla wafer in each cup and set aside
3. In a large bowl, beat cream cheese at high speed, using an electric mixer, until creamy
4. Add in sweetened condensed milk, 1 cup crushed candy, and food coloring
5. Stir until well blended
6. Fold in 2 cups cool whip
7. Spoon mixture evenly into muffin cups
8. Cover and freeze for at least 2 hours or until firm
9. Top with remaining cool whip and sprinkle crushed peppermint on top
