Ingredients

  • Idaho Potatoes
  • Olive Oil
  • Salt
  • Fresh Ground Pepper

Instructions

  1. Adjust the oven rack to the lowest position in the oven
  2. Preheat oven to 450f
  3. Cut the potatoes lengthwise into eights to form wedges
  4. Toss the potatoes with the oil on a heavy baking sheet or jelly-roll pan, and arrange them flat in a single layer
  5. Bake the potatoes without turning, until the bottoms are golden and crisp, about 20 minutes
  6. Turn potatoes to the other side
  7. Bake 10 minutes more until crisp
  8. Remove from the oven and sprinkle with salt and pepper
