Ingredients

  • Frozen Whole Kernel Corn
  • Tomato Paste
  • Chopped Tomatoes
  • Jalapeno Peppers
  • Green Pepper
  • Onion
  • Lean Ground Beef
  • Lite Olive Oil
  • Green Olives
  • Ground Cumin
  • Salt
  • Allspice
  • Chili Powder
  • Hot Pepper Sauce
  • Yellow Cornmeal
  • All-purpose Flour
  • Sugar
  • Baking Powder
  • Butter
  • 2% Low-fat Milk
  • Egg
  • Sharp Cheddar Cheese
  • Jalapeno Pepper

Instructions

  1. Heat oil in a large skillet
  2. Add onion and green pepper
  3. Saute until tender
  4. Add beef and cook until crumbly
  5. Add tomatoes, tomato paste, corn, olives, cumin, salt, all spice, chili powder, pepper sauce and cornmeal
  6. Simmer stirring frequently for 30 minutes
  7. Preheat oven to 450f
  8. Spoon mixture into a 2 1 / 2 qt casserole
  9. Make tamale topping—————-
  10. In a large bowl mix, flour cornmeal, sugar and baking powder
  11. Add melted butter, milk, and egg
  12. Stir only until dry ingredients are just moistened
  13. Quickly stir in the jalapeno pepper and cheese
  14. Back to the casserole———–
  15. Spoon the topping in large spoonfuls around the edge of the casserole
  16. Bake in 450f uncovered for 25-30 minutes or until cornmeal topping is cooked through and lightly browned
