Hot Sour Coconut Soup

Simple soup with great flavour. Adapted from wine, food & friends by karen macneil. Serve with a crusty buns. Karen recommends serving this with a crisp and aromatic gewurztraminer or dry riesling

Ingredients

  • Fresh Ginger
  • Fresh Cilantro
  • Garlic
  • Lemongrass
  • Chicken Broth
  • Cooking Spray
  • Chicken Breasts
  • Fresh Mushrooms
  • Light Coconut Milk
  • Fish Sauce
  • Chili Paste
  • Sugar Snap Pea
  • Fresh Basil
  • Lime Juice

Instructions

  1. Place first 5 ingredients in a large saucepan
  2. Bring to a boil
  3. Cover, reduce heat and simmer 20 minutes
  4. Strain mixture through a sieve into a bowl
  5. Discard solids
  6. Return infused broth to pan
  7. Heat a large non-stick skillet over medium-high heat / coat with cooking spray and add chicken
  8. Cook about 8 minutes, stirring occasionally until lightly browned
  9. Remove from pan
  10. Add mushrooms to pan, saute 5 minutes or until tender
  11. Add chicken, mushrooms, coconut milk, fish sauce and chili paste to broth in saucepan and bring to a boil
  12. Reduce heat and simmer 10 minutes
  13. Add peas
  14. Cook 3 minutes
  15. Remove from heat
  16. Stir in basil and lime juice
