A different twist on the usual potato salads that's colourful and flavourful.

Ingredients

  • Tiny New Potatoes
  • Picante Sauce
  • Lime Juice
  • Olive Oil
  • Salt
  • Pepper
  • Roma Tomato
  • Black Olives
  • Green Onions
  • Fresh Cilantro

Instructions

  1. Boil potatoes in water, then simmer for 15 to 20 minutes drain and cut into quarters when cooled down
  2. Meanwhile, combine picante sauce, lime juice, oil, salt & pepper in a small microwave safe bowl
  3. Cook, uncovered, on high for one minute or until heated through
  4. Add sauce to cooked potatoes
  5. Stir in tomatoes, olives, green onion and cilantro
  6. Toss to coat and serve
